Director of Operations, Pacific Institute of Culinary Arts (PICA)

Born and raised in Vancouver, Tim has 45 years of Hospitality Industry experience in this competitive and internationally recognized market.

His education includes a Diploma of Hospitality Administration from BCIT, Chef de Cuisine certification by the Canadian Culinary Institute, and dual Diplomas as a Sommelier by both the International Sommelier Guild (ISG) and the Wine and Spirit Education Trust (WSET).  The WSET organization has also awarded Tim with the Level 3 Assessor status, allowing him to instruct their wine education classes. He is presently enrolled in the bachelor’s degree program in Hospitality Administration at VCC.

Tim has sat on many industry related boards and committee’s such as the Vancouver International Wine Festival. He is currently Vice Chair of the Sector Advisory Group – Hospitality, for the Industry Training Authority of British Columbia and is one of their Red Seal Chefs/Assessors granting government trade certification in Cooking.

He is a past member of the Society of Wine Educators and founded the non-profit BC Wine Appreciation Society and served as its first President from 2003 to 2009. Tim was also appointed the National Technical Committee Chair - Restaurant Service for Skills Canada overseeing two Provincial and three National competitions.

Extensive travels have taken Tim around the world exploring wine regions (including running the 2011 Medoc Marathon) and dining experiences. He has worked with the Canadian Government and private sector exporters, representing Canadian food and beverage producers globally. He is a sought after energetic public speaker known for enthusiastically extolling the virtues of education, certification, training, gracious hospitality, and the benefits of a service driven attitude.

Regularly published in trade and consumer magazines including the Publican, InnFocus, Alberta F&B News, Cannabis Retailer, and Tidings. Tim has appeared in newsprint and on television including NBC’s ‘The Today Show’, regular spots on BCTV, CTV, City TV and The Food Network as well as radio. He continues to spread the word of hospitality and professionalism.
